Pictures of Dutch pancakes have caught my eye recently. What is a Dutch Pancake you ask? It is a big, fluffy, baked, pan, cake! I looked up some recipes because I was dying to make one, but all of the recipes seemed a bit too heavy and rich for me. I worked my “kitchen magic” and combined parts of many recipes I came across, and I came up with a DELICIOUS {Healthier} Dutch Pancake with Strawberries and Blueberries recipe. Here’s what you need:
- 3 large eggs
- 1 cup of all purpose flour
- 1 cup of light unsweetened coconut milk
- 3 tablespoons of sugar plus 2 pinches
- 1/2 teaspoon of salt
- 1 1/2 teaspoon of organic vanilla extract
- 1/2 cup of blueberries
- 1/2 cup of strawberries
Here’s what you do:
- Preheat the oven to 400 degrees F.
- In a blender, combine the eggs, flour, coconut milk, sugar, salt, and vanilla extract. I use the Ninja Kitchen System blender because it is the BEST one out there!!!!
- Pour the batter into a greased, 12″ cast iron skillet.
- Pour in the blueberries and strawberries. Scatter them in the batter as evenly as possible.
- Bake in the oven for 25 minutes or until a knife come out clean
- When done, remove from the heat and allow to sit for about a minute. Sprinkle the top of the puffed pancake with a few pinches of sugar.
Top with Real Maple Syrup if desired, and ENJOY!!!!

My daughter absolutely loves pancakes, and I’m always trying to look for ways to spice them up for her. This is the perfect recipe!
