dutch pancake

Pictures of Dutch pancakes have caught my eye recently. What is a Dutch Pancake you ask? It is a big, fluffy, baked, pan, cake! I looked up some recipes because I was dying to make one, but all of the recipes seemed a bit too heavy and rich for me.  I worked my “kitchen magic” and combined parts of many recipes I came across, and I came up with a DELICIOUS {Healthier} Dutch Pancake with Strawberries and Blueberries recipe.  You have to try this!!! This Post May Contain Affiliate Links  

Here’s what you need:

Here’s what you do:

  1. Preheat the oven to 400 degrees F.
  2. In a blender, combine the eggs, flour, coconut milk, sugar, salt, and vanilla extract.   I use the Ninja Kitchen System blender because it is the BEST one out there!!!!
  3. Pour the batter into a greased, 12″ cast iron skillet.
  4. Pour in the blueberries and strawberries.  Scatter them in the batter as evenly as possible.
  5. Bake in the oven for 25 minutes or until a knife come out clean
  6. When done, remove from the heat and allow to sit for about a minute.  Sprinkle the top of the puffed pancake with a few pinches of sugar.

Top with Real Maple Syrup if desired, and ENJOY!!!!

  4. I love pancakes but have never heard of Dutch pancakes before. They definitely sound like something I would enjoy though! I love the idea of adding fruit to them. Yum!
