It happens to be autumn here in New York, one of the most beautiful seasons in my region. Apples are in abundance on the trees ready for picking. I love making all kinds of apple trees this time of year. One of my favorite things to make are these healthy apple oatmeal power cookies because not only are they so delicious, I don’t feel guilty eating them. Filled with wholesome and healthy ingredients, these cookies serve my body well. Packed with all sorts of goodness- no added sugar, protein, and loads of vitamins and nutrients, these cookies are perfect for snacks while running, hiking, or just enjoying a fun day! Ready to make the best Healthy Apple Oatmeal Power Cookies ever?!?!
Here’s what you need:
- 1 large apple- You need 1 cup of apple diced into bite-sized pieces
- Juice of half a lemon
- 1 cup
- 1/2 cup
- 1 1/2 teaspoon
- 1 tablespoon
- 1/2 teaspoon
- 1 egg, beaten
- 2 tablespoons , melted
- 1 tsp
- 1/2 cup
- 1 tsp (ground flax seeds)
- 1tsp
- to line a cookie sheet
Here’s what you do:
- In a large bowl, mix together the instant oats, whole wheat flour, baking powder, ground cinnamon, sea salt, flax meal, and chia seeds. Set aside.
- In another large bowl, dice the apple up into bite-size pieces. Immediately sprinkle the pieces with lemon juice to stop browning. Stir well. Add in the egg, coconut oil, vanilla extract, and applesauce. Mix well.
- Fold the dry mixture into the wet mixture just until moistened. Set up the mixture into the refrigerator for about 45 minutes. The mixture should be firm enough now to form cookies after this time.
- Preheat the oven to 350°F.
- On at cookie sheet lined with parchment paper, make a ball with about I tablespoons worth of dough and flatten it into a cookie shape on the cookie sheet. Depending on how generous your scoops were, you will make between 12 and 15 cookies.
- Bake the cookies for 12 to 14 minutes, or until golden brown. Remove them from the cookie tray after 3 minutes and allow them to cool on a cooling rack.
- Once cooled, store in an airtight container. I keep mine in the fridge so they last about a week. That is if I don’t eat them all before then! 🙂
