For a last minute gathering, I decided to whip up some Banana Pecan Mini Muffins. Banana Muffins usually are made with walnuts. Well, that’s not going to work in my kitchen because I don’t have any! With NO time to run to the store to replenish the walnut supply, I used pecans instead. WOW! What a great, sweet flavor it added! I am go glad that I ran out of walnuts, because I might not have ever used pecans in this batter otherwise. Adding a bit of whole wheat flour into the batter (because II ran out of regular flour) added great texture and flavor to the muffins! I definitely will add these options to my muffin repertoire!
Here’s What you need:
- 1 1/2 cups of all-purpose flour
- 1/2 cup of
- 2 teaspoons of
- 1/2 teaspoon of
- 1/2 teaspoon of
- 1 teaspoon of ground cinnamon
- 3/4 coarsely chopped pecans
- 1 egg, beaten
- 3/4 cup light
- 1 1/2 cups of ripe banana, mashed
- 1/3 cup canola oil
- 1 teaspoon of
Here’s what you do:
- Preheat the oven to 375 degrees F.
- Mix together all of the dry ingredients except for the brown sugar.
- In another bowl, mix together the egg, brown sugar, banana, oil, and vanilla.
- Add the flour mixture to the wet mixture, and fold together just until the dry ingredients are moistened. The batter will not be smooth.
- Divide up the batter into a greased muffin pan.
- Bake for 15-16 minutes or until an inserted toothpick comes out clean.
- After 2-3 minutes of cooling in the pan, remove and let cool on a wire rack.
Serve warm! Enjoy with a cup of coffee or tea!

OH these look good, I love pecans but I’ve never thought to put them in banana muffins. Now I’m going to have to make them just to see how good they are. Best part is I have all the ingredients on hand. yay!
The pecans were so yummy! I think chocolate chip cookies were a great recipe made by “accident” as well. I wasn’t sure how the pecans would taste in the muffins at first! I read somewhere that the chocolate fell in the batter and the rest was history! I love good “accidents”!:) Enjoy!

“Happy accidents” are the best. I love pecans. My mom bought large quantities from a friend with pecan trees, so I grew up on them. Unfortunately they are not as readily available to me as and rather expensive.
