Blueberry Goat Cheese Spread on Rosemary Flatbread.  That’s a mouthful both figuratively and literally. Literally, it might be one of the greatest mouthfuls you’ll ever have. 🙂 One day while looking for a snack, I opened up my refrigerator only to find a bunch of random things. A few things that spoke to me were 2 quarts of fresh blueberries that my AMAZING neighbors, Joan and Vinnie,  gave me and a small log of goat cheese. I thought about how I love the raspberry goat cheese combination, and I imagined that’s a blueberry goat cheese combination would be just as amazing. I was right. The spread itself is absolutely delicious. Then add it together this sweet mixture to a savory rosemary flatbread cracker and you have something that is out of this world. I love that it is so simple to make,  yet looks so elegant. ISN’T THE COLOR MAGNIFICENT?!?!? I plan on serving this add a get together with a few friends later this week. I know that I will WOW the crowd with this one!   It is a MUST try!

Here’s what you need:

  • One pint of fresh blueberries
  • 8 ounces of goat cheese
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon of pure maple syrup
  • crackers (I use . Kamut is an ancient grain. These crackers contain minimal ingredients and are as healthy as can be. *** I am not sponsored by the company in anyway.  I just love these crackers!)

Here’s what you do:

  1. Combine the blueberries, lemon juice, and maple syrup into a small saucepan. Heat for about eight minutes on low to medium heat.  The blueberry should burst, create some juice, and blend with the maple syrup to produce a syrupy sauce. Feel free to heat it another minute or two longer if it needs to be reduced a bit more so that it is slightly syrupy. Stir a few times while he blueberries are cooking.

  1. Allow the blueberry mixture to cool for a minute or two after coming off of the heat. It will get thicker as it cools.

  3. Refrigerate the spread until firm, about an hour.   4. When cooled, spread a generous amount of spread on a flatbread cracker.

SERVE and ENJOY!    A glass of some chilled white wine pairs extremely well with this dish. 🙂  Usually things that are this purple scare me because they are made that way artificially.  How amazing is it that this spread is made of 100% natural ingredients?!?!?  I love it!
