In my household, there is a lot of athletic activity. Quinoa Chia Power Breakfast Bowl
There many different kinds of breakfast people in this world! Some eat it, some don’t. Some are breakfast “pickers”, some are “sit down” breakfast people. Some people eat big breakfasts, and some like it light.
Hands-down, I’m a breakfast, non-picker, eater. I like a filling, warm, and substantial breakfast. Normally each morning, I find myself enjoying a breakfast burrito consisting of egg, avocado, a small amount of cheddar cheese- wrapped in a whole wheat tortilla. This is my go-to, mostly healthy, breakfast that I can grab and take on the go. This breakfast burrito keeps me full until lunch time. I like it. However….
In hopes to cut down on some carbs and to add a little variation into my mornings, I was inspired to make this Quinoa Chia Power Breakfast Bowl. At first I was skeptical of having quinoa in my morning meal as I use it mostly in many dinner recipes. Let me tell you though, quinoa has made its way to my breakfast menu and it is here to stay! This Quinoa Chia Power Breakfast Bowl meets all of my breakfast criteria. It is warm, filling, and teeming to the brim with protein and goodness. The flavor is full and creamy, yet light and vegan. Banana Chia Protein Smoothie
What is your “go to” fix to keep your body fueled when having a busy day? Mine are smoothies! I make myself one just about every day. They are the perfect healthy, quick and easy thing to make- either for a snack or sometimes as a meal itself! I am on a mission lately to make my diet as simple and healthy as possible. No Churn Espresso Chocolate Chip Ice Cream
Is there anyone in the world that doesn’t LOVE ice cream? Well, I might say I LOVE coffee/ espresso MORE actually…. Hard decision to make. Combining the two though, and WHOA! That might be the greatest thing on earth! I want to welcome the warmer weather here in NY with some of this creamy, coffee goodness. What better way to do that then to make No Churn Espresso Chocolate Chip Ice Cream? Within 10 minutes, I was able to mix all ingredients together and pop it in the freezer! I LOVE Maple Syrup? Do you?!?!?!?! I just finished making my fourth batch of maple syrup this year. So far, we have 5 gallons of this liquid gold! Decadent Cocoa Dusted Chocolate Bon Bons
Are you ready to have your tastebuds travel to a fancy confection shop in Paris?!?!? Well, let’s go! I recently needed to make a dessert to take to a friends house, and I thought I would try my hand out at making something chocolatey and delicious. I searched through my stash of recipes, sifting through tons of recipes that seemed too complicated to make. I was looking for something quick, easy, and simple to whip together. I was intrigued by a recipe I found from France- in French, but I lacked some of the ingredients necessary. Well, I pretended I was a French candy maker, and I made my own version using what I had in my pantry. These Cocoa Dusted Chocolate Bon Bons came out tasting SO delicious and were ridiculously easy to make. These will go in my repertoire for ever more….. C’est magnifique! (more…)

Healthy Lemon Garlic Hummus
When I was in Turkey a few years ago, I ate the best hummus I have ever had (at every meal, every day)! I was so fortunate to strike up a conversation with the charming cook in a small restaurant while in Izmir. I was SO lucky to chat with her for a bit and talk ALL ABOUT THE AMAZING FOOD she made at her small family style restaurant. She allowed me to sample a few things, including freshly ground tahini. WHAT A TREAT! Tahini is sesame seed paste, and it a adds flavor and a level of DELICIOUS to any dish. The other day, I was reminiscing about my trip, and I decided to make the recipe that the woman told me and that I wrote down on a paper place mat. Baba Ganoush is one of my favorite dishes to eat. Smoky, creamy, healthy, and easy to make! When I was in Turkey a few years ago, I ordered it every chance I got. I was SO fortunate that I was able to learn from a woman a befriended there how to make it. I have been enjoying it ever since. I am in love with the nutty, rich flavor this dip boasts. It uses only a few simple ingredients and is really healthy. I like to eat it with pita chips or slices! Crunchy veggies such as cucumbers and carrots are great to dip too.
