I am a smoothie lover! I am always experimenting with new and exciting blends. My most recent experiment was trying to recreate a smoothie that I had a few months ago. Although my version was different than the one I had tried, I LIKE THIS ONE BETTER! In fact, this Healthy Mango Cashew “Coconut Milk” Shake is so rich, creamy, and smooth that I labeled it a “shake”. It truly resembles something like a milkshake or an ice cream shake, but it is 100% healthy!!!!. Naturally sweetened by the fruit, no dairy, and the protein from the cashews allow you to enjoy this decadent treat without the guilt. Here’s what you need:
- 1 cup light, unsweetened organic coconut milk
- 1 mango, peeled
- 1 date, pitted
- about 10 cashews or 1 tablespoon cashew butter
- 5 ice cubes
Here’s what you do:
- Blend all ingredients together in a Ninja Kitchen System Blender (these are the best out there) until smooth!
- Add water in small increments of you would like to thin the shake a bit.
Enjoy and prepare to fall in LOVE with this shake! 🙂
