The other day, I was at a farm stand and had one of best peaches I have ever had in my life. It was perfectly ripe, sweet, and had the best texture. Ever since then, I feel that I have become obsessed with peaches. I think about them often, and try to incorporate them into every dish I have made since. 😊 Some were successful, some ….not so much. Today I will share with you one of the VERY successful desserts I made using perfect, fresh peaches. These Peach Cobbler Cupcakes are SO YUMMY! As always, I try to keep my recipes a bit more healthy than not, and this recipe is no exception! With a relatively small amount of sugar, light unsweetened coconut milk as the liquid, and coconut oil as a healthy fat, these Healthier Peach Cobbler Cupcakes top the charts!

These Peach Cobbler Cupcakes can be made with canned peaches, but there is nothing like using perfectly ripe, fresh peaches! Either way, they are ridiculously YUMMY! You will LOVE them!
Here’s what you need: (they are SO easy to make)
- 1 cup
- 3/4 cup
- 2 teaspoons baking powder
- 3/4 cup
- 1/2 teaspoon
- 1 tablespoon butter, melted
- 4 medium peaches, sliced
- to grease the muffin pan
- , to sprinkle on the top
- cinnamon, sprinkle on the top
Here’s what you do:
- Preheat the oven to 350º F.
- Grease the muffin pan with a generous amount of coconut oil. This is so the cobblers don’t stick, but it will also get absorbed with the batter.
- Mix together the flour, sugar, baking powder, salt, melted butter, and coconut milk.
- Fill each muffin cup about 1/2 way.
- Divide the peaches evenly. Top the batter with the sliced peaches. These slices will sink into the batter when baked.
- Sprinkle the tops with brown sugar and cinnamon.
- Bake for 15 minutes. The tops will be golden brown.
- When cooled, remove them from the pan and ENJOY!
- Top the cupcakes with whipped coconut cream or some ice cream for a real treat!
